“To make a good salad is to be a brilliant diplomatist - the problem is entirely the same in both cases. To know how much oil one must mix with one's vinegar.”
Oscar Wilde (1854-1900)
Storage: Greens should be stored in a plastic bag in the coolest part of your refrigerator.
Preservation: Not so much… You could make a lettuce soup and freeze or can it, but we suggest you eat these leaves while they are fresh!
Cleaning: Do not wash the leaves until you are making your salads; they will keep longer. Soak leaves in cool/ cold water and toss them in a salad spinner to dry. (If you do not have a salad spinner, I highly recommend purchasing one! You can find them in kitchenware for under $20) This is the easiest way to clean and dry your leaves without bruising them. No salad spinner- lay the leaves out on a kitchen towel and pat dry with paper towels.
