Kale is a cruciferous vegetable (meaning a member of the Cruciferae or mustard family, also called the Brassicaceae), cultivated for over 2000 years. It is essentially a primitive, non-heading cabbage, with which it shares its taxonomy, Brassica oleracea, but it most closely related to collards as they are both of the Acephala cultivar group.
We grow two varieties. The first, "Tuscano", (above), is a Lacinato kale with very dark, savoyed leaves, sometimes called dinosaur kale on this account. The second we offer is a Red Russian kale, (below), which is actually type of siberian kale with a slightly different taxonomy, Brassica napus pabularia, with a flatter, paler aspect, and reddish stems and veins.
