Asparagus officinalis is the first vegetable of spring at Red Goose Gardens. It is a perrenial that produces in increasing amount over several years, before declining. The beds then must be replanted. Our asparagus beds are three years old now, and will reach their peak over the next few seasons.
Asparagus is a good source of vitamin A, and has useful amounts of vitamins B and C, and iron.
